New Zealand has the same sort of visa standards as Australia as for work the industry is small here and there are plenty of Pool Builders who operate on there own employing some casual labour as required.
If you had skills to offer like plastering or spraying and cutting yo may be able to get the odd job. But the visa is a must.
Like in the US if want to work in Australia you will need a work visa. SInce this is a matter for immigration - I will not comment on that part of our questiion because it would undoubtedly be on the assumption that the company that is to employ you is able to make a case that you skills are needed in his company rather than someone of similar skills working in the trade here in this country. In other words that you are not putting an Aussie out of work.
Let us assume that you overcome that bit of bureaucracy, then I am sure there are many companies that would like to have you working on a seasonal basis in Australia while in the US it is the off season. It would then be a matter of your particular skills and experience and how they apply to the conditions here.
